Michael has been a part of the seafood industry from early childhood years where he would run home from school to help in his parents’ fish and chip shop. With his passion for people and food ignited, he continued learning his craft and has owned and operated a number of successful shops across Sydney. This has helped develop a loyal customer base for the last 30 years.
Michael prides himself on delivering customer satisfaction something he is very passionate about. In 2003 Michael won ‘Best Fish and Chips in Sydney’ at the prestigious bi-annual Sydney Fish Market Seafood Excellence Awards while operating in Sylvania Waters.

He did take a break from the sector and ran a successful gourmet food cafe in Alexandria for the last 4 years or so. Michael’s burning passion for fresh fish and chips sees him return in 2019 to the industry he loves most with the opening of Fish Cove, located in the Eastern Suburbs of Sydney in the heart of Rose Bay.
Michael will shun traditional industry practices of using low cost imported fish types and offer a selection of fresh sustainably sourced seafood from local providores in Australia or New Zealand. His fish and chips will be made using New Zealand Hake that is freshly caught.
To compliment the seafood range will be burgers & salads that will all be freshly prepared on site – you can even watch as the area is open to the public instead of behind closed doors.
Come and meet Michael and the team. Fish Cove is a modern twist on the traditional fish and chip shop with a good side serve of old fashioned passion thrown in. As soon as you meet him, his infectious passion for food will have you salivating and ready to eat.
Sometimes it is the little things that count most. Michael is passionate about sourcing fresh, local ingredients where ever possible. The potatoes used in the hot chips are sourced from Australian growers in Victoria that deliver a crispy chip full of flavour without that mush, powdery texture that can from from using imported products.
Fish Cove uses pure canola oil that is grown, milled and sourced from western NSW. It delivers healthy monounsaturates with a balance of Omega 3 and 6 (polyunsaturates), high levels of alpha-linolenic acid (ALA), the lowest saturated fat of any vegetable oil and around half that of olive oil, very low levels of trans fatty acids, no cholesterol and good levels of Vitamin E. Another example of sourcing locally and supporting local growers.
